Quinoa with Chickpeas and Ginger

Yields:

4- 6 servings

Ingredients:

1 cup quinoa
1/2 cup chickpeas
1 tablespoon Coconut Aminos (www.coconutsecret.com/aminos2.html)
1″ fresh ginger root; shredded
Chopped parsley
Chopped cilantro

Directions:

  1. Cook quinoa (follow instructions on package)
  2. Rinse and add chickpeas to cooked quinoa
  3. Mix in coconut aminos, ginger, parsley, cilantro
  4. Serve and enjoy
