Blueberry Peach Chia Seed Muffins

Ingredients
2 eggs
1 tbsp coconut oil
1/8 tsp almond extract
6 tbsp unsweetened almond milk
1 tbsp chia seeds
3 tbsp Grade B Maple Syrup
1/4 cup sifted organic coconut flour
1/2 tsp baking powder
1/4-1/3 cup frozen blueberries1/4 cup frozen white peach slices, chopped

Directions

  1. Preheat oven to 400F
  2. Beat together the wet ingredients
  3. In a separate bowl, mix together the dry ingredients
  4. Thoroughly combine the two sets of ingredients
  5. Fold in the frozen fruit
  6. Spoon into muffin tins, and bake for 15-17 minutes
  7. Makes 6-12 small muffins

Cool on a rack and enjoy.

    Hi! Thank you for an inspiring recipe. I would like to ask because I don’t live in the USA what a Grade B Maple Syrup is, I just know Maple syrup as such, no grades.

      Thanks for your question.

      Maple syrup is graded according to the Canada, United States, or Vermont scales based on its density and translucency. Sucrose is the most prevalent sugar in maple syrup. In Canada, syrups must be at least 66 percent sugar and be made exclusively from maple sap to qualify as maple syrup. In the United States, a syrup must be made almost entirely from maple sap to be labelled as “maple”

      Grade B version has the most pronounced taste, it is usually reserved for cooking.
